Method

15g of coffee, ground on demand when possible. Grind medium-fine, think coarse sand.

Start your timer. You are going to do 4 pours amounting to 250ml. For best results use 92°C filtered water.

0 sec: 30 ml / 30 sec: 100 ml / 60 sec: 60 ml / 90 sec: 60 ml

Let the last pour drip through. Total brew time should be about 2.5 minutes.


 

Troubleshooting

If your brew time is too long use a coarser grind. If it is too short, make it finer. This is how you affect flavour.

Longer brew time = higher extraction = darker notes, less acidity.

Shorter brew time = Lower extraction = lighter notes, more acidity.
